🍫 1. Avocado Chocolate “Delight” Brownie (Naturally Gluten-Free)
This cookie uses your favorite ingredient, avocado, instead of butter, making it extremely creamy and rich in healthy fats.
Ingredients:
$2 ripe avocados, mashed
$3 eggs
$100\,\text{g}$ quality Dutch cocoa powder
$150\,\text{g}$ almond flour (or ground almonds)
$150\,\text{g}$ honey or maple syrup
$1\,\text{teaspoon}$ baking soda
A pinch of salt
$100\,\text{g}$ dark chocolate chips (min. $70\%$)
Preparation:
Preheat oven to 175°C.
Blend avocado until completely smooth.
Add eggs and sweetener, then mix until foamy.
Fold in dry ingredients (cocoa, almond flour, baking soda, salt).
Finally, stir in the chocolate chips.
Bake for about 25-30 minutes. Let cool completely before slicing, as this is when you will achieve the perfect “fudge” texture.
🍋 2. Lemon-Almond “Cloud” Cake (Flourless)
This is a light, airy cake based on the refreshing combination of almonds and lemon.
Ingredients:
$200\,\text{g}$ almond flour
$4$ eggs (separated)
$100\,\text{g}$ xylitol or erythritol (or brown sugar)
$1$ organic lemon, grated zest and juice
$1\,\text{teaspoon}$ baking powder (gluten-free)
Sliced almonds for topping
Preparation:
Beat the egg yolks with half the sweetener until white. Add the lemon juice and zest.
Mix in the almond flour and baking powder.
Beat the egg whites with the other half of the sweetener until stiff, then carefully fold into the almond mixture in three batches.
Pour into a baking tin lined with baking paper and sprinkle with almond slices.
Bake at 160°C for approx. 35–40 minutes.
