Vegan muffins are light and super tasty sweets , a light variant of the classic blueberry muffins . Prepared with very little sugar and without milk, eggs and butter, they are perfect for those who follow a vegan diet, for those who are intolerant to one of these foods or for those who pay attention to their figure, but don’t give up pampering themselves with something good.

With a soft and slightly moist consistency, vegan muffins can be enjoyed for breakfast or as a snack dipped in a soy milk cappuccino or hot tea. Easy to make, just mix all the dry ingredients in a bowl – type 0 flour, whole cane sugar, baking powder, lemon zest and salt -, add a mixture of water and oil, and mix well until obtain a smooth and creamy mixture.

Once the fresh blueberries have been incorporated, the mixture is distributed into a muffin mold, lined with baking paper, and then cooked in the oven. You can enjoy them warm, simply dusted with a little icing sugar , or accompanied with a chocolate ganache or an egg-free lemon cream (you can replace the cow’s milk with a vegetable drink).
