This Dutch apple pie consists of shortcrust pastry on the bottom, a middle layer of apples and aromatic sweet spices and is topped with crunchy oat streusel. The secret ingredient in the streusel topping is ground almonds, which combine with oats, butter and sugar to provide a heavenly crunch and taste.
You can make the shortcrust pastry yourself or buy ready-rolled sheets from the supermarket to save time.
Serve this apple pie with a scoop of ice cream, vanilla sauce or cream. Or simply enjoy a piece neat with a cup of good coffee.
Instructions
Roll out the prepared dough to fit a large cake pan.
Filling:
Melt butter in a large pot. Add brown and white sugar and water and stir.

Add flour, cornstarch, cinnamon, nutmeg, lemon zest and vanilla and stir until incorporated.

apple slices and mix gently until the apples are covered with the sauce.

Pour into the cake base.
Topping:
Place almonds, oats, brown sugar, flour and cinnamon in a food processor. Process until fine crumbs form.

Add butter and pulse a few times. Sprinkle evenly over the pie filling.
Bake for 45 minutes in a preheated oven at 160 °C (fan oven) and gas mark 4.
Remarks:
If you want a topping with larger crumbs, squeeze the topping between your fingers while it rests on the pie filling to form small clumps of crumbs.
