This is a great tip! Finding a head-sized mushroom is a real treat—we’re probably talking about the giant peanut mushroom (Calvatia gigantea) or the giant dragonfly mushroom (Macrolepiota procera), two true forest relics when picked at the right time.
To conjure up something “incredible” in the kitchen, here are some of the best ways to pay it the respect it deserves:
Grilled Mushroom Steaks (For Peanut Mushroom Fans)
These giant mushrooms have a texture reminiscent of marshmallow or tofu when fresh (they should be completely white inside).
Tip: Slice them thickly (like beef steaks).
The secret: Grill them with garlic butter, thyme, and a little saltwort. They soak up the flavors like a sponge and become incredibly succulent.
Perfect Breading
If the mushroom is a bit firm: Coat the slices in beaten egg and breadcrumbs (panko will make them even crispier). Fry them until golden brown. This creates a crispy crust and a velvety soft interior that rivals any luxury snack.
Drying for “Umami Powder”
If you can’t eat them all at once (which is perfectly normal given their size!): Slice the mushroom thinly and dry it.
Grind the dried slices into a fine powder. This powder is a true umami powerhouse that enhances sauces, risottos, or soups in winter.
⚠️ The golden rule for mushroom hunters: Always be 100% sure of the mushroom species before eating. If the inside of the mushroom is already yellowish or greenish, it means it’s producing spores and the flavor is gone!
What does this mean? Will it be the star of the dinner party, or are you saving it for a special occasion?
