A quick, no-bake fruitcake is ideal for these situations: creamy, refreshing, and made with everyday ingredients. It contains no flour, requires no baking, and most of the work is done on the stove and in the refrigerator.

In this version, we use strawberries, but raspberries, cherries, or currants are also fine.
🧺 Ingredients
Base:
300 g butter biscuits or sponge cake (finely crushed)
130 g melted butter
Cream:
500 ml milk
1 egg yolk
4 tablespoons sugar
1 tablespoon vanilla sugar
4 tablespoons cornstarch
1 tablespoon butter (at room temperature)
Fruit:
chopped strawberries to taste
(can be substituted with raspberries, cherries, or other berries)
👩🍳 Preparation
1️⃣ Making the base
Mix the crushed biscuits with the melted butter until smooth.
Press half of the mixture into a round mold (ideally with a removable bottom). Use the bottom of a glass to make the surface smooth and firm.
Lightly pour 2-3 tablespoons of milk over the surface.
💡 Tip: Don’t have a mold? Line a regular baking sheet or bowl with parchment paper.
2️⃣ Making the Cream
Place the milk, sugar, vanilla sugar, egg yolk, and cornstarch in a small saucepan.
Heat over low heat, stirring constantly, until the mixture thickens and becomes smooth.
Finally, stir in a tablespoon of butter.
3️⃣ Assembling the Dessert
Spread the cream evenly over the prepared crust.
Arrange the chopped strawberries on top.
Drizzle with the remaining biscuit mixture and drizzle lightly with about 4 tablespoons of milk.
4️⃣ Chilling
Refrigerate the dessert for at least 1 hour to firm up and let the flavors meld.
You can dust with powdered sugar before serving.
