Firm potatoes with a low water content are ideal. They hold their shape well and are crispier after cooking.
2️⃣ Slicing
Peel the potatoes (or leave the peel on) and cut them into slices or cubes. It’s important that they are roughly the same size, otherwise they will cook unevenly.
3️⃣ Brief boiling (crucial step)
Place the potatoes in boiling salted water and boil for 3-5 minutes. They shouldn’t be soft, just slightly firm.
