Every bite of freshly baked cookies has a bit of magic in it. And these? They are literally irresistible. They smell of vanilla, have a soft, crumbly dough and inside is a sweet peach cream that melts on your tongue. You will prepare them once or twice – and believe me, after a minute there will not be a crumb left!
🧁 What you will need
For the cream:
300 ml milk
1 egg yolk
10 g vanilla sugar
3 tablespoons sugar
2 heaping tablespoons cornstarch
For the dough:
2 eggs
100 g sugar
100 ml sunflower oil
300 g plain flour
10 g baking powder
grated lemon zest
Topping:
80 g peaches in syrup (cut into small pieces)
🍋 Step-by-step instructions
- Cream:
Pour the milk into a saucepan, add the egg yolk, vanilla sugar, sugar and cornstarch.
Cook over low heat, stirring constantly, until the mixture thickens.
Transfer the finished cream to a bowl and let it cool. - Dough:
In a bowl, beat the eggs with the sugar and oil.
Add flour, baking powder and lemon zest.
Knead a soft dough and divide it into two parts.
Put one part in the freezer – it will be grated later. - Shaping:
Roll out the second half of the dough and cut out circles.
Place them on a baking sheet with baking paper.
Place a few peaches on each circle and top with a portion of cream. - Finishing:
Grate the hardened part of the dough onto the biscuits – this will create a crispy, golden crust. - Baking:
Bake in a preheated oven at 180 °C for about 15-20 minutes, until the biscuits are golden brown.
Let them cool briefly – and then just taste!
