Flour (fine flour) 300 g
Butter (cold, cut into cubes) 200 g This butter makes the dough crumbly!
Powdered sugar 100 g
Egg yolks 2 pcs

Lemon zest (grated) 1/2 pc Untreated lemon zest, for aroma.
Vanilla sugar 1 package
Pinch of salt 1 pinch
Jam Approx. 150-200 g Peach jam or raspberry jam (preferably slightly sour).
Preparation

  1. Quick Dough Preparation (The Secret to Shortening)
    Kneading: Place the flour, powdered sugar, vanilla sugar and a pinch of salt in a large bowl. Add the cold butter cubes and grated lemon zest.
    Crumble: Using your fingertips, quickly rub the butter into the flour (it should resemble crumbs).
    Assembly: Add the egg yolks. Knead quickly into a smooth dough. Do not over-knead, as the butter may melt and the dough will be tough!


    Resting (Refrigeration): Wrap the dough in foil and refrigerate for at least 1 hour. This rest period allows the butter to harden and the dough to be easily stretched.
  2. Stretching and Piercing
    Preparing the oven: Preheat the oven to 180 °C (top and bottom heat).
    Stretching: Roll out the dough on a floured surface to a thickness of approx. 3-4 mm.
    Piercing: Cut out shapes (circles, stars, etc.). It is important to also punch out the middle of half of the pieces with a smaller hole punch (this will be the “lid”).

  3. Baking
    Baking: Place the linzer rings on a baking sheet lined with baking paper.
    Baking time: Bake for 8-10 minutes, until the edges just start to brown.
    Cooling: Let the rings cool completely on the baking sheet, as they are fragile when hot.
  4. Assembly
    Icing sugar: Sprinkle the holey circles with plenty of icing sugar.
    Gluing: Spread the full circles with jam, then place the icing sugar, holey circles on top.
    Storage: The linzer will be at its tastiest after two to three days, when the dough has absorbed some of the moisture from the jam. Store in an airtight container.
