🍄 Mushroom-Ham Puff Pastry (Quick Preparation)
I. Ingredients

Puff pastry 1 package (fresh, roll) Approx. $250-270$ g
Ham $100$ g Diced or torn into thin slices
Mushrooms $200$ g Fresh mushrooms, sliced
Red onion 1 small head Chopped
Garlic 1-2 cloves Crushed or chopped
Sour cream or Crème fraîche $1-1.5$ dl (approx. 3-4 tablespoons)
Grated cheese $50$ g E.g. mozzarella, gouda, or parmesan for the top
A little oil/butter For frying the mushrooms
Spices Salt, pepper, thyme/oregano
For greasing 1 egg yolk
II. Preparation (Approx. 15 minutes work + 20 minutes baking)
The Filling (7-8 minutes):
Heat a little oil/butter in a frying pan.
Add the chopped onion, then the garlic after $1-2$ minutes.
Add the sliced mushrooms. Season with salt, pepper, and a pinch of thyme.
Simmer until the mushrooms release their juice and then the juice evaporates. Important: the filling should not be watery!
Remove from the heat, stir in the ham and sour cream/crème fraîche. The sour cream gives it the creamy effect.
The Puff Pastry (5 minutes):
Preheat the oven to $200\ ^\circ\text{C}$ (top/bottom heating).
Spread the puff pastry on a baking sheet with the baking paper.
Tip: Cut a border around the edge of the dough about $1\ \text{cm}$ wide, but don’t cut all the way through! This border will rise nicely and give you a pizza-like shape on a baking sheet.
Prick the center of the dough with a fork a few times.
Filling and Baking (3-4 minutes + $20$ minutes):
Brush the border with the beaten egg yolk.
Spread the mushroom and ham filling in the middle of the dough (within the egg border).
Sprinkle the top with grated cheese.
Put in the hot oven and bake for about $15-20$ minutes, until the dough is golden brown, crispy and the cheese is bubbly.
