A great recipe from the 90s: homemade honey gingerbread

Necessary ingredients:

• kefir (or sour milk) — 350 ml;

• sugar — 200 g;

• yolk — 2 pcs., protein — 1 pc.;

• honey – 1 tbsp. spoon;

• oil — 3 tbsp. spoons;

• soda — 1 tsp. (incomplete);

• about 4 cups of flour.

For fondant:

• protein — 1 pc.;

• sugar — 3 tbsp. spoons

The cooking process

1. Beat the yolks with one protein (and separate the second protein for fondant) and honey with sugar, pour this mixture into kefir and oil. Lightly beat again.

2. Gradually add sifted flour with soda (no vinegar needed, soda will be extinguished by kefir) and knead a NOT stiff dough.

3. Roll out the dough into a layer 1 cm thick, squeeze out circles with a mold, put them on parchment on a baking sheet at a short distance from each other and bake for 25 minutes at a temperature of 180-190 degrees.

4. While the gingerbread is baking, prepare the fudge: beat one egg white with 3 spoons of sugar with a whisk until it is completely dissolved. It is not necessary to whip to steep steady peaks, but only until the whites become white and the sugar dissolves.

5. After 20-25 minutes, take the gingerbread out of the oven, quickly brush it with whipped egg white (it is very convenient to use a silicone brush for this purpose), you can put it in two layers, like mine, and put it back in the oven for another 10 minutes.

Then take the gingerbread out of the oven and put it on a plate. Homemade gingerbread on kefir with honey is ready.
