“Spartacus” cake is a chocolate version of honeydew, so everyone will like this cake!

LIST OF NEEDED INGREDIENTS:

Dough recipe for honey chocolate cakes

For the dough:

  • 280 grams of flour
  • 90 grams of butter
  • 25 grams of cocoa
  • 130 grams of sugar
  • 60 grams of honey
  • 2 eggs
  • 1 teaspoon of soda (without bitter)
  • 1 tsp. baking powder
  • a pinch of salt

RECIPE:

  1. Mix butter, honey, sugar and eggs.
  2. Beat a little and put on a slow fire. Cook for a couple of minutes, stirring constantly (until the sugar dissolves).
  3. Add soda and cook, stirring, until dark caramel color (about 5-7 minutes).
  4. Mix flour, cocoa, salt and baking powder. Pour the hot mixture there and knead the dough with a spoon, let it cool.
  5. Divide the dough into 8 parts, roll them out (between two sheets of parchment) with a thickness of 3-5 mm, fold them one on top of the other, together with the parchment, and send to the refrigerator for 1-2 hours.
  6. Preheat the oven to 180 °C.
  7. Prick the cakes with a fork and bake for about 7 minutes. (I fit 2 pieces on the baking sheet)
  8. Immediately, while still hot, cut evenly to the shape.

Cream for Spartacus:

  • 450 grams sour cream
  • 140 grams of sugar
  • 10 grams of vanilla sugar
  • 200 grams of butter
  • 25 grams of starch
  • 2 eggs

CREAM RECIPE:

  1. Combine everything except oil, mix well and put in a water bath.
  2. Cook, stirring constantly, for about 10 minutes, until the mixture thickens.
  3. Allow to cool completely.
  4. Beat the softened butter well until it turns white. Gradually add the custard base and beat until an airy cream appears.
  5. It is better to collect the cake in a ring and on scales.
  6. Weigh the cream separately. Place the first cake on the bottom of the mold, reset the scales and spread 1/8 of the cream. And so all the following. Do not cover the top cake with cream.
  7. Send the cake to the refrigerator for at least 1 hour.

Chocolate glaze:

  • 90 grams of sugar
  • 25 grams of cocoa
  • 50 grams of milk
  • 40 grams of butter

GLAZING RECIPE:

  1. Mix everything except oil in a saucepan and cook over low heat, stirring constantly, for about 3 minutes, add oil, stir until smooth and remove from heat to cool slightly.
  2. Take out the cake, remove the ring, smear the sides of the cake with the remaining cream, pour the glaze, level it, sprinkle with crumbs (cuts from the cakes) and send it to the refrigerator for the night.
