Mandarin cake: the recipe for the soft and fragrant dessert

Mandarin cake is a soft and fragrant dessert, made with a light dough and without butter. A very easy and quick preparation, similar to that of the more famous orange cake: all you need to do is carefully wash the strictly organic and untreated mandarins, cut them into segments, collect them in a mixer and mix them up.

The puree obtained is mixed with sifted sugar, eggs, milk, seed oil, flour and yeast. Mix quickly with a hand whisk, pour the mixture into a mold, lined with baking paper, and then proceed with cooking in the oven.

The final result will be a soft cake, with a moist and very fragrant consistency, ideal to enjoy during the winter season. Excellent for breakfast and a snack, simply sprinkled with icing sugar and accompanied by your favorite drink, it will win over adults and children alike.

How to prepare Mandarin Cake

Step 1
Wash the mandarins well under cold running water.

Cut them into wedges leaving the peel.

Remove the seeds.

Step 4
Collect the mandarins in a food processor.

Blend the mandarins until you obtain a coarse puree.

Pour in the sugar.

Step 7
Combine the eggs.

Blend all the ingredients.

Pour the mixture into a large container.

Add the oil.

Pour the milk.

Sift the flour directly into the bowl.

Add the sifted yeast.

Mix all the ingredients well with a hand whisk.

Pour the mixture into a 24cm diameter cake tin, lined with 15cm baking paper.

Cook the cake in the oven at 180°C, in static mode, for 45 minutes.

Remove the cake from the oven and let it cool completely.

Dust the surface with icing sugar.

Advice
To prepare this dessert, use organic mandarins with very thin and non-chemically treated skin.

If you prefer a less bitter taste, you can still remove the rind of the fruit.

You can enrich the mandarin bread dough with chocolate chips, raisins or dried fruit of your choice, coarsely chopped; you can also add spices, such as cinnamon, vanilla or cardamom.

The mandarin cake can also be decorated with chocolate icing, to make it even more delicious.

Storage
The mandarin bread can be stored for 3 days at room temperature under a glass bell jar or in a special airtight container.
