Savoy cabbage meatballs are a simple and tasty dish, excellent to serve as an appetizer or second course for a family lunch or a dinner with friends: fragrant, tasty and tender, they will be snapped up and will conquer even the littlest ones. home, usually less fond of cooked vegetables.
Making cabbage meatballs is not difficult and they can be cooked in a pan in just a few minutes. Fresh cabbage is used and, after removing the harder outer leaves, the softer ones are taken, the hard central core is cut and reduced to thin strips.
The cabbage is then left to stew in a pan with the extra virgin olive oil, garlic and water, then the boiled mashed potatoes are added and everything is enriched with the cooked ham, cut into cubes, the egg, the grated parmesan and breadcrumbs, necessary to thicken the mixture.
Make many meatballs and then leave them to brown in a pan with a drizzle of oil, for a final result that is crunchy on the outside and soft to the bite; if you prefer, you can cook them in the oven , always spraying them with a drizzle of oil, at 180°C for about twenty minutes.
If you want, you can replace the cooked ham with sausage or speck or omit them for a vegetarian version. You can flavor the mixture with aromatic herbs or spices, such as sweet curry or cumin, for a pleasant exotic note.
