Pancarré parmigiana is a tasty and irresistible preparation, an original and quick variation of the classic mozzarella en carrozza. In our recipe, slices of bread are dipped in a mixture of eggs and milk, stuffed in layers with scamorza and cooked ham and finally baked until golden, crunchy and irresistibly stringy . A dish that will complete any lunch or dinner, even after a late return from the office, and that will appeal to both adults and children. How to prepare parmigiana bread
Step 1
Cut the scamorza into cubes

Tip
Versatile and delicious, pancarré parmigiana can be topped with whatever you prefer or what you have on hand: mozzarella and anchovies, for example, is a winning combination; you can also replace the scamorza with smoked provola or another string cheese and the cooked ham with raw ham or speck. You can also add a few pieces of vegetables, for an even more nutritious and colorful preparation.
For greater convenience, you can buy ready-made bread, even in a wholemeal version if you prefer, or you can prepare it at home with our recipe.
