Potato cakes filled with melted cheese

Ingredients for potato cakes filled with processed cheese:

1 kg potato(s), boiled until floury
1 onion(s)
1 garlic clove(s)
10 g butter
2 egg(s)
2 tbsp potato starch
Salt and pepper
Thyme
200 g ( processed cheese )
Oil or clarified butter for frying

Preparation of potato cakes filled with processed cheese:

Boil the potatoes for about 20 minutes, rinse, peel and press through the potato press.

Peel the onion and garlic, dice finely, sauté in butter. Divide the processed cheese/sheep’s cheese into eight pieces.

Add eggs, potato starch, onion and garlic cubes to the potatoes, knead well, season with salt, pepper and thyme. Form eight meatballs out of the mixture, press a piece of cheese into the middle of each and coat well with the potato mixture. Heat oil in a pan and fry potato cakes on both sides until golden brown.

Serve with a mixed salad, cucumber or green bean salad or braised cherry tomatoes.
