Lemon bread is a typical Sicilian pastry dessert, perfect for dunking it for breakfast in a glass of hot milk or enjoying it as a snack with the whole family. It is a kind of plumcake, with a soft and pleasantly soft consistency, with an unmistakable citrus scent, very reminiscent of orange bread: another specialty of the island, traditionally prepared in winter.
To bring it to the table you will need a sweet and juicy lemon, to be cut into small pieces and mixed whole, including the pulp and zest: that’s why we suggest you buy it organic and untreated chemically, so you can taste it. without any fear, then the white part, slightly bitter. Once pureed, with a drop of water, just add it to a mixture of eggs, sugar, extra virgin olive oil, yeast and flour, then pour the resulting mixture in the appropriate rectangular mold and cook everything in the oven at a lower cost. more than 40 minutes. You will thus obtain a delicious and fragrant cake, to be cut into slices and served as a happy ending to a meal at the end of Sunday lunch.
Once ready, you can dust the dessert with a light coating of icing sugar, as we did, or you can cover it with lemon glaze, grated coconut or chopped almonds, to sprinkle on the surface before cooking. If you prefer, you can enrich the preparation with candied orange peel, chocolate chips, raisins soaked in rum or even with a small glass of limoncello, for an even more fragrant result.

How to make lemon bread
Step 1
Rinse the lemon, dry it and cut it into small pieces
