Ingredients meatballs:
400 gr. ground beef
1 egg
A small handful of breadcrumbs
A handful of finely chopped parsley
2 garlic cloves finely chopped
1 small onion, diced and sautéed briefly
Pepper, salt, paprika powder and a pinch of nutmeg
Ingredients sauce:
3 tablespoons clarified butter
1 green onion cut into rings
5 sliced mushrooms
1 tbsp tomato paste
200 ml beef stock
200 ml white wine
100 ml cream
1 tbsp beef broth granules
salt and pepper
1 tablespoon Worcestershire sauce
Cornstarch dissolved in water for thickening
Mix all the ingredients for the meatballs together and form four flat meatballs of the same size and fry them in a pan with clarified butter. Briefly fry the mushrooms in the stock and remove from the pan. Now sauté the onions and roast them with the tomato paste. Deglaze with white wine and let the liquid reduce. Stir in the beef stock and bring to the boil, then pour in the cream. Refine with granulated broth, salt, pepper and Worcestershire sauce, season to taste and thicken if necessary, only then put the mushrooms back into the sauce and leave to stand for a few minutes.
