Baked potato croquettes are a light but equally tasty variant of the traditional fried potato croquettes . Ideal to serve as an appetizer for a convivial dinner with friends or at aperitif time , they are prepared with a mixture of boiled potatoes, egg yolks, grated Parmesan cheese, parsley and nutmeg, for an aromatic and fragrant note.
Many cylindrical croquettes are formed, floured and then dipped in beaten eggs and finally in breadcrumbs; arranged in a pan and drizzled with a drizzle of oil, they are cooked in the oven for a mouth-watering final result. Crunchy on the outside and soft and yielding in the heart, they are perfect for buffets and birthdays, but also for an irresistible packed lunch .

How to make Baked Potato Croquettes
Step 1
Boil the potatoes in boiling water for 30-40 minutes; drain, peel and mash them with a potato masher in a large bowl

Let them cool, then add a pinch of salt and nutmeg

Add the eggs and parsley, finely chopped

Knead everything until you get a soft and homogeneous compound

Take small pieces of dough and form cylindrical croquettes as similar as possible to each other

Beat the eggs in a small bowl, pour the breadcrumbs and flour into two others

Coat the croquettes by first rolling them in flour

Advice
You can stuff the croquettes with ingredients of your choice such as cubes of stringy cheese or salami. If you prefer, you can serve them with dipping sauces , like a mild mayonnaise or fresh guacamole .
You can make them in advance and store them in the fridge, covered with plastic wrap, until it’s time to cook them.
