Opening a can of sardines seems simple: pull the tab, remove the lid, eat the fish. However, there are common mistakes in preparation, selection, and consumption that can impair the taste or ruin a culinary experience.
- You throw away the oil or the fish juices
The oil in high-quality canned sardines isn’t just a preservative; it has absorbed the fish’s aroma.
Olive oil: Excellent as a base for salad dressings, for sautéing vegetables, braising garlic, or simply for dipping with fresh bread.
Fish juices/water: Can add depth to sauces or fish soups.
- You always buy the cheapest kind
With sardines, quality makes a huge difference:
Processing method: Cheap varieties are often machine-processed and precooked, which dries out the fish. High-quality sardines are usually freshly packed by hand. 3. You eat sardines straight from the can – without acidity.
Sardines are high in fat and have an intense umami flavor. Without a flavor balance, they can quickly become heavy.
