Homemade oven-baked potato chips sound perfect—but unfortunately, they often end up as a soggy, burnt, or chewy disappointment. The reason? Potatoes are packed with starch and moisture.

If you want to avoid deep-frying and still get maximum crunch, proper preparation is key. Here’s the ultimate 3-step trick for perfectly crispy and super-light oven-baked chips:

To get the perfect texture, simply slicing the potatoes isn’t enough. The secret lies in the combination of soaking, briefly pre-cooking, and extremely thorough drying.

Step 1: Slice thinly and wash out the starch
Slice or grate the potatoes (preferably waxy potatoes) into paper-thin slices (about 1 mm).

Place the slices in a bowl of ice-cold water for at least 15 to 30 minutes. You’ll see the water become cloudy—that’s the excess starch that would make the chips soggy later. Then rinse them thoroughly.

Step 2: The Secret Tip – The Vinegar Bath (Optional, but brilliant)

Bring water to a boil in a pot and add a splash of white vinegar (about 1–2 tablespoons).

Pre-cook the potato slices in it for exactly 3 minutes.
