This cake has been a classic on my Easter table for 20 years. The secret lies in the perfectly fluffy dough that holds its shape, but is light and supple. Ideal for family celebrations or just for the joy of the holidays.
Ingredients
5 eggs
200 g sugar
150 g plain flour
50 g starch (e.g. cornstarch)
1 packet baking powder
1 packet vanilla sugar
a pinch of salt
butter and flour to grease the mold
Procedure
Preheat the oven to 180 ° C and grease the mold with butter and sprinkle with flour.
Separate the eggs into whites and yolks. Beat the whites with a pinch of salt until stiff.
Beat the egg yolks with the sugar and vanilla sugar until light and fluffy.
Gently fold in the flour mixed with starch and baking powder.
Finally, carefully fold in the egg whites so that the dough remains fluffy.
Pour the dough into the mold and bake for 30–35 minutes, until the surface is golden and a skewer inserted in the middle comes out clean.
Tip
After cooling, you can cut the cake and spread it with your favorite cream filling or decorate with chocolate and fruit for a festive effect.
