For the glaze:
100 g high-quality dark chocolate
30 g butter
👩🍳 Preparation method
1️⃣ Body
Beat the egg yolks with sugar and a pinch of salt until light foam (approx. 3-4 minutes). Add oil and milk, mix gently.
Sift the flour with cocoa and baking powder. Mix into the dough to form a smooth mass without lumps.
Pour the dough into a mold (22 cm) lined with baking paper. Bake at 180 °C for about 10 minutes. Let cool.
2️⃣ Preparing the cream
Mix the gelatin with 50 ml of water and let it swell.
Beat the butter until fluffy, then add the condensed milk and beat for another 2-3 minutes.
Heat 150 ml of water with 150 g of sugar in a saucepan. Bring to the boil and cook for about 6 minutes to form a sugar syrup.
Beat the egg whites with 50 g of sugar and a pinch of salt until stiff peaks form. While whisking constantly, slowly pour in the hot sugar syrup. Whisk until the mixture is glossy and firm.
Gently heat the gelatine to dissolve (do not boil), and fold it into the egg whites. Finally, incorporate the buttercream and whisk until smooth and fluffy.
3️⃣ Assemble the cake
You can lightly drizzle the cooled base with milk. Place a cake rim around it and pour the prepared soufflé over it.
Put the cake in the fridge for at least 8 hours (ideally overnight) to set completely.
4️⃣ Chocolate icing
Melt the chocolate with the butter in a water bath. Pour over the set cake and spread evenly.
Leave to cool for another 10-15 minutes to set the icing.
