2 sheets of puff pastry
4 eggs
Bitter almond essence, optional
150g ground almonds
50g butter
110g sugar
125ml milk
A quarter of a vanilla bean
10g cornstarch

How to prepare Galette des Rois: To prepare a delicious galette des rois, we start by making the pastry cream. To do this, we put the milk in a saucepan with 15g of sugar and vanilla, over medium heat. When it boils, remove from heat and let it rest.

Meanwhile, beat an egg yolk with 15g of sugar until you obtain a whitish mixture. Then add the reserved milk, which will already be hot, and the cornstarch. Return to low heat and stir until all the ingredients have thickened. After removing it from the heat, let it rest.

Next, we move on to making the almond cream. To do this, we beat the butter, which should be at room temperature, along with 80g of sugar. When the two ingredients are well mixed, add first a beaten egg, stir, and then another, also beaten. Mix everything well and then add the grated almonds.

To this almond cream, we add the pastry cream we made earlier. If we want it to have an even more almond-like flavor, we will add a few drops of bitter almond essence. We place the resulting cream in a piping bag and let it rest for about half an hour.

Separately, we take the puff pastry sheets and cut two circles of approximately 27 and 28 centimeters in diameter. We take the smaller one and spread the filling we have on the puff pastry over it, without reaching the edges.

We beat an egg yolk and brush the edges of the puff pastry sheet (without filling) using a pastry brush. If we’re adding a surprise, now’s the perfect time.

We cover the filling with the larger sheet of puff pastry and seal the edges with a fork.

Then we add a little water to the leftover egg yolk from brushing the edges and use it to brush the entire surface of the puff pastry that serves as the topping. We put the galette in the refrigerator for another half hour.

After this time, we preheat the oven to 210°C (410°F), with top and bottom heat. While it’s heating, brush the entire surface of the galette again and make the designs we like best using a knife.

We put the galette in the oven and let it cook for about ten minutes. Then we lower the temperature to 180°C (350°F) and leave it for another 20 minutes. Finally, we remove it and let it cool before consuming. Absolutely delicious!
