The secret to a “true” Black Forest cake isn’t just the cherries—it’s the Kirschwasser (cherry brandy) and the contrast between the tart fruit and the sweet, airy whipped cream.

  • 2 tbsp Cornstarch
  • 2 tbsp Sugar

Instructions: Drain the cherries, but keep the juice. Mix 4 tbsp of cold juice with the starch. Boil the remaining juice with sugar, stir in the starch mix until thick, then fold in the cherries. Let it cool completely.


3. The Cream & Assembly

  • 4 cups (1 liter) Heavy whipping cream (very cold!)
  • 4 packets Cream stiffener (Sahnesteif) or ½ cup powdered sugar
  • 100g Dark chocolate shavings

Assembly Steps:

  1. Drizzle: Brush each cake layer with extra Kirschwasser.
  2. Layer 1: Spread a thin layer of cream, then pipe “rings” of cream and fill the gaps with the thickened cherry mixture.
  3. Layer 2: Top with the second cake layer. Cover with a thick layer of plain whipped cream.
  4. Layer 3: Top with the final cake layer. Cover the entire top and sides of the cake with the remaining whipped cream.
