Calypso Torte

The Calypso Torte is a vibrant, retro-inspired dessert that feels like a tropical vacation on a plate. It’s famous for its striking layers: a dark chocolate base, a creamy filling (usually flavored with yogurt or cream cheese), and a bright, glossy orange or tropical fruit topping.

It’s called “Calypso” because of its sunny, Caribbean-inspired flavors. Here is a version that is sophisticated enough for a party but easy enough for a weeknight.

1. The Dark “Volcano” Base

  • 3 Eggs
  • ½ cup (100g) Sugar
  • ½ cup (100g) All-purpose flour

Instructions: Beat eggs and sugar until very fluffy (about 5 minutes). Sift in the flour, cocoa, and baking powder. Fold gently. Bake in a greased 10-inch (26cm) springform pan at 180°C (350°F) for 20 minutes. Let it cool completely.


2. The “White Sand” Cream

  • 2 cups (500g) Greek yogurt (or Quark)
  • 1 cup (250ml) Heavy whipping cream
  • ½ cup Powdered sugar
  • 1 packet (or 6 sheets) Gelatin (prepared according to package)
  • Optional: A splash of coconut milk or rum for that Calypso vibe.

Instructions: 1. Whip the heavy cream until stiff. 2. In a separate bowl, stir the yogurt, sugar, and any flavoring. 3. Stir the dissolved gelatin into the yogurt mixture, then gently fold in the whipped cream. 4. Pour this over the cooled chocolate base and smooth the top. Chill for 2 hours.


3. The “Golden Sunset” Topping

  • 1 ½ cups (350ml) Orange juice or Multi-vitamin tropical juice
  • 1 packet Clear cake glaze (Tortenguss) or 1 tbsp cornstarch
  • 2 tbsp Sugar

Instructions: 1. Mix the juice, sugar, and glaze/starch in a small pot. 2. Bring to a boil while stirring constantly until it thickens and becomes clear. 3. Let it cool for about 3-4 minutes (it should be warm but not hot). 4. Pour carefully over the set white cream layer.
