After a hard day at the homestead – whether it’s tending to the marquee or tending to the goats – a cool, creamy strawberry cake like this is the ultimate reward. This recipe combines the richness of traditional cakes with the vitality of fresh, garden-fresh fruits.
Since softness (like your freshly laundered sheets) and simplicity are important to you, this no-bake version will be your favorite.
Fabulous Strawberry Cheesecake (No Bake)
This cake is not only beautiful, but its texture also stays silky if you follow the secrets of layering.
Ingredients for the base:
250 g oat biscuits (or any wholemeal biscuits)
100 g melted butter
A handful of your favourite protein-rich nuts (e.g. ground almonds or walnuts for extra crunch)
For the cream:
500 g cream cheese (or homemade goat’s curd, crumbled, if you want a truly authentic homestead flavour)
250 ml whipping cream (chilled)
150 g icing sugar (or honey/natural sweetener)
1 teaspoon vanilla extract
Juice of half a lemon (refreshes the flavours)
For the strawberry layer:
300-400 g fresh strawberries (best if picked straight from your garden)
2 tablespoons sugar
A few drops of lemon juice
Step-by-step preparation:
The base: Crush the biscuits (e.g. with a rolling pin in a bag), mix the melted butter and ground nuts. Press into the bottom of a cake tin and refrigerate while you prepare the cream.
The cream cheese: Mix the cream cheese with the sugar, vanilla and lemon juice until smooth. As you already know with the mint and oil, patient mixing creates the perfect emulsion.
The mousse: Whip the cream until stiff, then carefully fold it into the cream cheese mixture. Smooth it onto the biscuit base.
The strawberries: Blend half of the strawberries with the sugar and lemon juice, and slice the other half. Pour the strawberry sauce over the top of the cake and decorate with the slices.
Resting: Leave in the fridge for at least 4 hours (or overnight) to allow the flavours to meld and the consistency to firm up.
Vitality tip from the homestead
Refreshing twist: Before serving, tear fresh mint on top. The combination of mint and strawberries is not only fragrant, but also helps with digestion after a hearty dinner.
Nutrition: The protein-rich seeds hidden in the biscuit base provide the energy you need to continue chopping wood or building bamboo structures the next day.
Safety reminder at the end of the day
While you enjoy a cool cheesecake on the patio and plan your next pallet garden project, don’t forget your well-established safety routine.
Keep your golden rule in mind: Unplug the charger when your phone is not on it. A safe home and homemade treats make country life truly complete.
