To make a true Wallachian frgál (Valašský frgál) that tastes like it came from a grandma’s oven in the heart of Moravia, you need to know one specific rule: a real frgál is a large, thin sourdough pie where the filling-to-dough ratio is almost 1:1.
While traditional preparation can take all day, this simplified version uses instant yeast and a few tricks to get that authentic flavor in much less time.
🛒 The Ingredients
The Soft Dough:
- 500g Flour (ideally a mix of half “hladká” and half “polohrubá” for that perfect bite)
- 250ml Warm milk
- 80g Melted butter
- 60g Sugar
- 2 Egg yolks (makes the dough extra yellow and rich)
- 1 pack (7g) Instant yeast
- A pinch of salt and a grate of lemon zest
The Traditional Toppings (Choose one):
- Pear (Hruškový): Dried pear purée mixed with cinnamon, star anise, and cloves.
- Curd (Tvarohový): 500g curd cheese, 1 yolk, sugar, raisins, and a splash of rum.
- Poppy seed (Mák): Ground poppy seeds boiled in milk with sugar and plum jam.
The “Drobenka” (Crumble topping) – DO NOT SKIP:
- 100g Coarse flour (“hrubá mouka”), 80g butter, 80g sugar.

- The Quick Dough: Mix the warm milk, sugar, and yeast. Let it bubble for 2 minutes. Add the flour, yolks, melted butter, salt, and lemon zest. Knead until smooth.
- Shortcut Rise: Let the dough rise in a warm place for 45 minutes.
- The Shape: Divide the dough into 3 equal parts. Roll each part into a very thin circle (about 30cm wide) directly on parchment paper. Grandma’s secret: The edges should be slightly higher, but the middle should be almost translucent.
- The Filling: Spread your chosen filling all the way to about 1cm from the edge. A true frgál has a thick layer of filling.
- The Finish: Sprinkle generously with the crumble (drobenka).
- Baking: Bake at 180°C (350°F) for about 15–20 minutes until the edges are golden.
