Ingredients for the dough
8 eggs
250 ml vegetable oil
200 g sugar
100 g plain flour
180 g semolina
80 g cocoa powder
1 packet vanilla sugar
1 packet baking powder
grated peel of 1 orange
Ingredients for the syrup
400 g sugar
500 ml water
2 tablespoons cocoa powder
100 g dark or semi-sweet chocolate
Ingredients for the chocolate frosting
200 ml whipping cream (min. 30%)
200 g quality chocolate
Preparation procedure
1️⃣ Syrup
Pour water into a saucepan, add sugar and cocoa powder. Bring to a boil and cook, stirring constantly, for about 2-3 minutes, until the sugar is completely dissolved.
Remove the pot from the heat, add the broken chocolate and stir until it is completely dissolved. Let the syrup cool to room temperature.
2️⃣ Dough
Beat the eggs with the granulated and vanilla sugar until light, fluffy foam. Pour the oil in a thin stream, stirring constantly.
Add the grated orange peel and then the dry ingredients mixed together. You will have a thicker, but smooth dough – do not add any more liquid.
3️⃣ Baking
Pour the dough into a mold measuring approximately 23 × 32 cm, lined with baking paper. Smooth the surface and bake in a preheated oven at 180 °C for about 35 minutes, until a skewer comes out dry.
4️⃣ Syruping
Prick the hot bun in several places with a skewer and slowly pour the cooled syrup over it. Let it cool completely so that the liquid is evenly absorbed.
5️⃣ Frosting
In a smaller saucepan, heat the cream with the chocolate and stir until a smooth, shiny frosting is formed. Spread it evenly over the surface of the bun.
Place the dessert in the refrigerator for at least a few hours, ideally overnight.
A result that is worth it
The bun is beautifully juicy, distinctly chocolatey, with a delicate citrus aroma and velvety frosting. Every piece literally melts on your tongue.
