Looking for a simple, quick, and reliable recipe when you’re craving something sweet? This one-egg cocoa cake is exactly the kind of dessert you can whip up in a hurry. You don’t need a whisk, complicated techniques, or long mixing sessions. All you need is a few basic ingredients and the dough is ready in minutes.
In Czech households, “mug” cakes are among the most popular – and this one is one of those that always succeeds. The cake is soft, chocolate-scented, and beautifully juicy thanks to the marmalade.
Ingredients (cup version)
2 cups plain flour
1 cup sugar
2 tablespoons good quality cocoa
1 egg
1 cup milk
4 tablespoons oil
½ packet baking soda
3–4 tablespoons jam (apricot or currant is ideal)
1 bar of chocolate (chopped or grated)
Procedure
Pour the flour, sugar, cocoa and baking soda into a large bowl. Mix to combine the dry ingredients evenly. Add the eggs, milk and oil and mix everything thoroughly with a whisk or wooden spoon into a smooth dough.
Finally, stir in the jam, which will give the cake its softness and delicate fruity taste, and the chopped chocolate.
Grease the mold or baking sheet with oil and sprinkle with flour. Pour the dough into the mold and smooth it out.
Bake in a preheated oven at 180 °C for approximately 30-35 minutes. A skewer test will tell you when it’s done – if it comes out dry, you can take it out.
