In recent years, more and more people have begun to pay attention to what they eat. Many of us try to limit, where possible, the addition of additives, colorings, or preservatives, and so we return to homemade recipes with the same enthusiasm as our grandmothers. And you know what? With pancetta, it makes incredible sense.
The story that led me to this is quite funny. I was looking for a classic pork side dish at the butcher’s to smoke or pickle, but every time I heard the same thing: “We don’t have pancetta without nitrites.” So I decided to make it at home.
And the result? A simple process, few ingredients, and a flavor far superior to most store-bought options.
What you’ll need
For 1 kg of fresh pork belly (skinless), prepare:
Basic dough
2 cups coarse sea salt or kosher salt
2 cups brown sugar
1 tablespoon freshly ground pepper
“Sweeter” option
2 cups salt
1.5 cups brown sugar
½ cup maple syrup
1 tablespoon pepper
Both methods are similar, the difference being noticeable only in the dish: the first dough is more pronounced, the second is more delicate, slightly sweet.
Step-by-step instructions
Prepare the containers
A glass baking dish or ceramic bowl is preferable: the material does not alter the flavor of the meat.
Cover the meat with the dough.
Spread half of the dough on the bottom of the baking dish.
Lay the meat and cover it evenly with the rest of the dough.
The meat must be completely covered.
Refrigerate for one week.
Leave the mold uncovered and refrigerate for 7 days.
Every day, the mixture will change: it will extract the liquid from the meat, which will begin to act as a natural brine.
Rinse after a week
Remove the meat, rinse with cold water, and pat dry with a paper towel.
Tie or place in a zip-lock bag
And now you have two options:
have a butcher slice it
or slice it at home, according to your preferences.
Fry, bake, or store
The pancetta is ready to use immediately, without smoking or drying.
The flavor is surprisingly clean, natural, and pleasantly balanced between sweet and salty.
What did it taste like?
After a week of aging, the pancetta has a firm texture, a delicate aroma, and fries beautifully.
Both versions were successful:
the syrup version was just a little sweeter,
the basic mixture had a classic, strong, and authentic flavor.
But both were delicious. And most importantly: you know exactly what you’re putting in it.
