The amaretti semifreddo is a delicious spoon dessert perfect for the hottest summer days. Easy and very quick, it is prepared without turning on a fire or oven: first, the egg yolks are mixed with the sugar, until the mixture is light and frothy. Add the crumbled amaretti biscuits, the amaretto liqueur and finally the fresh whipped cream is added, mixing delicately and with movements from the bottom up to avoid disassembling the mixture. After resting for a few hours in the freezer, the result is a fresh, elegant dessert with a slightly retro flavour, ideal for serving at the end of a meal for a family lunch or a dinner with friends.
The amaretti semifreddo can be prepared in advance : just keep it in the freezer and then take it out just before serving. You can decorate it with tufts of whipped cream and amaretti biscuits, as in our version, or add the ingredients of your choice, such as flakes of dark chocolate or flaked almonds, for example. Instead of amaretto, you can use rum or maraschino and replace half the cream with mascarpone. For an even more delicious dessert, you can add about 60 g of chocolate chips to the mixture.
It is important to use very fresh and preferably organic eggs. We used a loaf pan mold , so as to cut the semifreddo into slices directly on the table, but you can also make it in elegant single portions.

How to prepare amaretti semifreddo
Step 1
First separate the egg whites from the yolks

Add sugar to the latter

Whip the egg yolks and sugar for about 7-8 minutes until they are light and frothy

Put the amaretti biscuits in a bowl and crumble them coarsely

Put the cream for desserts in a bowl and then whip it with an electric whisk
