This Christmas leaf wreath with apples and walnuts is exactly the kind of dessert that disappears from the holiday table faster than you can make coffee.
I made it for the first time last Christmas – and since then it has been one of the staples without which we can’t imagine the holidays.
Tender puff pastry, warm apple filling with raisins, cinnamon and walnuts…

Ingredients
For the dough and filling
puff pastry: 500 g
apples: 3 medium pieces
raisins: 120 g
butter: 50 g
sugar (brown or white): 60 g
ground cinnamon: ½ tsp
walnuts, chopped: 70 g
To finish
walnuts for sprinkling: approx. 20 g
eggs: 1 pc
milk: 20 ml
powdered sugar: for sprinkling
ice cream: optional for serving
Procedure
1️⃣ Preparing the apple filling
Pour the raisins with hot water and let them swell for a few minutes, then drain.
Peel two apples, remove the cores and cut into small cubes.
Melt the butter in a pan, add the apples, raisins, sugar and cinnamon.
Cook, stirring occasionally, for about 10 minutes, until the apples are soft and lightly caramelized.
Finally, stir in the chopped walnuts and let the filling cool slightly.
2️⃣ Preparing the dough
Preheat the oven to 180 °C.
Roll out the puff pastry on a baking sheet lined with baking paper.
Spread the filling in the middle in the shape of a circle – leave the center empty.
3️⃣ Shaping the wreath
Cut the edges of the dough into strips of equal width.
Fold the strips alternately over the filling to create a braided wreath.
Cut the remaining apple into thin slices and decorate the surface with them to taste.
4️⃣ Brushing and decorating
Whip the egg with milk and brush the entire wreath.
Sprinkle with chopped nuts.
5️⃣ Baking
Bake for approximately 30 minutes until the wreath is beautifully golden and fluffy.
After removing from the oven, let it rest briefly.
6️⃣ Serving
Sprinkle generously with powdered sugar before serving.
Serve warm – ideally with a scoop of vanilla ice cream.
