Linzer is the soul of the holiday table: the combination of shortcrust pastry and fruity jam is exactly the “luxury taste” that a homemade cake can offer. It is a particularly grateful recipe for those over 75, as the pastry stays soft and crumbly for days (or even weeks), so you don’t have to rush to bake at the last minute.
Since you highly value the Healthy Avocado Bread recipe and also pay attention to eye health, let’s make this classic with a little “Master-twist”!
The Shortcrust Holiday Linzer (The classic 3-2-1 ratio)
Ingredients:
300 g flour (you can also use finely ground spelt flour for gentle bowel cleansing).
200 g cold butter (diced).
100 g icing sugar (or birch sugar for blood sugar balance).
1 packet vanilla sugar.
1 egg yolk (one of the 2 eggs a day is perfect for this, you can use the white for your breakfast omelet).
Grated lemon zest (from organic lemon, for freshness).
A pinch of Himalayan salt.
For the filling:
Apricot jam or – your favorite – blueberry puree (for eye health and extra antioxidants).
Preparation “Master” way
Speed: The secret lies in cold ingredients and a fast hand. Crumble the flour with the butter, add the sugar, egg yolk and lemon zest. Knead quickly so that the butter does not melt from the heat of your hands.
Rest: Wrap in foil and refrigerate for at least 1 hour. (You can do your morning sit-ups or calf pumps during this time.)
Shaping: Roll out the dough to about 3 mm thick and cut out shapes. Poke holes in the middle of every other one.
Baking: Bake at 180°C for 8-10 minutes. Be careful not to let them brown, they should stay light!
Assembly: Once cooled, glue one filled and one with holes together with jam or blueberries.
Why is this cookie good for your routine?
Eye protection: Filling it with blueberries supports your vision, just like the blueberry eye protection cookie.
Soul and circulation: The aroma of baking (lemon peel, vanilla) calms the nerves and promotes deep breathing, which is part of lung detoxification.
Digestion: Spelt flour and quality butter help with gentle bowel cleansing (Darmreinigung), without causing a heavy feeling in the stomach.
Owner tip for holiday preparations
While the linzers are baking, drink a glass of apple cider vinegar and lemon water. This will help keep your blood sugar levels stable while you enjoy the cake. And if you sip a cup of ginger tea with your linzers, the power of the steamed ginger will help with digestion, so you can enjoy your holiday snacks without guilt.
