Spaghetti alla Poveraccia is a tasty and very tasty first course , ideal for a family lunch or a last-minute evening with friends. It is a dish ready in just a few minutes, belonging to the peasant tradition, made with simple and genuine ingredients: cherry tomatoes, garlic, extra virgin olive oil, oregano, fresh basil and, of course, spaghetti, to be replaced as desired with spaghettoni or another long pasta shape of your choice.
To bring them to the table, simply prepare a sauce of datterini tomatoes , sautéed in a pan with garlic and oil, and then flavored with aromatic herbs, then pour the spaghetti into the pan, previously cooked al dente in slightly salted boiling water, and finally stir in the all with a generous handful of grated Parmesan cheese : the result will be an economical and “dinner saver” dish with guaranteed success.
For a pleasantly spicy note, you can add a pinch of chilli powder or, for an even more appetizing rendering, you can enrich the sauce with anchovy fillets diluted in hot oil, sliced black olives or desalted capers.
If you love savory flavours, you can replace the Parmesan with aged pecorino or you can sprinkle the spaghetti, once served, with breadcrumbs or stale breadcrumbs: chopped and then toasted in a pan with a drizzle of oil, and a pinch of salt and pepper.
