Homemade pierogi are among those recipes that you never get tired of. They are soft, fluffy, beautifully fragrant and contain a juicy filling of chicken, mushrooms and onions inside. Our grandmothers used to make pierogi just like that – from ordinary ingredients, but with an extraordinary taste.
🥣 How to make the dough
Pour kefir into a bowl, add sugar, salt, eggs and oil. Beat with a whisk until all the ingredients are combined into a smooth mixture.
Then sprinkle flour mixed with baking powder and knead the dough with your hands – knead for about 8 minutes until it is soft and elastic.
Brush the finished dough with a little oil, cover with a towel and let it rest for 30 minutes.
🍄 Filling that smells like the whole kitchen
Cut the mushrooms, chicken thighs and onion into small pieces.
Melt the butter in a pan, add the onion and fry until golden brown. Then add the mushrooms and stir. When the water from the mushrooms has evaporated, add the chicken and fry until it turns white.
Add salt, season to taste (e.g. pepper, paprika, garlic powder), sprinkle with a little flour and stir.
Finally, add the cream and sour cream, combine everything and let it boil briefly. Let the filling cool.

Knead the rested dough and divide it into 12 equal parts. Shape each into a ball and then roll it out into a thin circle.
Put a spoonful of filling in the middle and wrap it up to create a bag or a pie.
Fry the dumplings in enough oil on both sides until golden brown, preferably over medium heat. Place them seam side down so they seal nicely and hold their shape.
