Blueberry Pistachio Balls

Blueberry Pistachio Balls are an extremely tasty, brightly colored holiday treat. The salty taste of pistachios and the tart sweetness of blueberries create a perfect balance.

II. Preparation (The Quick Assembly)

  1. Base of the Mass
    Chocolate Melting: Melt the white chocolate over a water bath or in the microwave on low heat. Let cool slightly.
    Mixing: In a bowl, mix together the room temperature cream cheese and powdered sugar until smooth. Add the melted chocolate and mix until creamy.
    Topping: Stir in the chopped cranberries and ground pistachios. The mixture will be soft but thick.
  2. Chilling and Shaping


    To chill: Cover the mixture and refrigerate for at least 1 hour until firm and easy to shape.
    To roll: Take small portions of the mixture (about the size of a walnut) and shape into even balls.
  3. To decorate
    To prepare: Spread the coarsely chopped pistachios on a plate.
    To coat: Roll the balls in the coarsely chopped pistachios to coat them all over. Press the pistachios lightly onto the balls.


    Serving: Place the finished balls on a plate. Store in the refrigerator until ready to eat.
    Tip: Adding a teaspoon of vanilla extract to the base will give it an even more delicious flavor!
