When it comes to “minced meat dinner,” most people imagine classic meatballs and potatoes or salad. But what if we combined these into one dish that smells great, fills you up, doesn’t need any other side dish, and is ready without standing at the stove for a long time?
This is exactly how minced meat baked with potatoes, cheese, and pickles works. Simple, homemade, and a little different than usual. Great for a regular family dinner, but also for those times when you just want something good without complicated planning.
Why this combination works
A mixture of two types of meat (e.g. pork + beef or chicken + pork) gives the dish juiciness and a more pronounced flavor.
The potatoes absorb the excess juice, creating a beautifully soft and fragrant layer.
Pickled or fermented cucumbers add a light acidity and freshness that perfectly balances the fat of the meat.
The cheese softens everything and brings it all together.
Spices like paprika and coriander make the dish more aromatic and give home cooking a new twist.
The result? One dish that has it all: meat, potatoes, vegetables, and a cheesy topping.
Recipe: Baked minced meat cutlets with potatoes, cucumbers and cheese
Ingredients
600 g minced meat (ideally a mixture of 2 types)
1 onion
2 slices of bread (bread or toast)
100 ml milk
1 teaspoon salt
1 teaspoon sweet paprika
1 teaspoon coriander
freshly ground pepper, or herbs to taste
4 potatoes
100 g cheese (Eidam, Gouda or a mixture)
3 pickles
3 tablespoons mayonnaise
Procedure
1) Preparing the meat mixture
Cut the bread into small cubes and cover with milk. Let it soak and add to the minced meat.
Finely chop the onion and mix. Season with salt, pepper, paprika, coriander, pepper and, if desired, chopped green parsley. Mix the mixture well.
2) Vegetables and cheese
Coarsely grate the peeled potatoes and squeeze out the excess water.
Grate the cheese finely.
Grate the cucumbers separately and squeeze them lightly.
3) Shaping and layering
Make medium-sized balls from the meat mixture, place them on a baking sheet lined with baking paper and flatten them slightly. This will create low “cutlets”.
Gradually layer the following on each cutlet:
grated potatoes
cucumbers
cheese
Finally, lightly drizzle or “splash” the surface with mayonnaise to soften everything nicely.
4) Baking
Bake in a preheated oven at 180 °C for about 40–50 minutes, until the cheese is golden brown and the potatoes are soft.
Result
Fragrant, juicy and beautifully colored cutlets that have everything in them that you usually put on a plate separately.
They go well with fresh vegetable salad, cucumber salad or just chopped tomatoes.
