For the patties
5 potatoes
2 eggs
100 g grated parmesan
70 g breadcrumbs
Parsley sprigs to taste
Salt and pepper to taste
Frying oil
For the simple sauce
2 tablespoons mayonnaise
1 clove garlic
1 tablespoon soy sauce
🔪 Step-by-step instructions
Peel the potatoes, cut them into pieces and cook them in lightly salted water. It will take about 20 minutes.
Mash the soft potatoes into a smooth mash.
Add the breadcrumbs, parmesan, chopped parsley, eggs, salt and pepper. Mix everything until you have a pliable mixture.
Lightly grease your hands with oil and form small patties.
Fry them in a pan on both sides until golden brown – usually 3 minutes on each side is enough.
Mix mayonnaise, garlic and soy sauce – you’ll get a quick dipping sauce.
And that’s it. Let it cool for a while and serve.

You can store the patties in a sealed container in the fridge for up to 2 days. Let them warm up briefly in a pan or in the oven before serving.
