There are indeed many delicious, traditional Hungarian chocolate bars that are perfect for the holiday table. One classic, loved by many for its simplicity and rich flavor, is the Chocolate Pudding Bar, or sometimes known as the “Creamy Cocoa Cookie” version.
Here is a recipe for a popular, creamy, festive chocolate bar:
Creamy Cocoa Chocolate Bar – Homemade Festive Dessert
Ingredients
For the Cocoa Sponge Cake (Dough):
Eggs: 4 pcs
Sugar: 4 tablespoons (approx. 80 g)
Hot water: 4 tablespoons
Flour: 4 tablespoons (approx. 80 g)
Cocoa powder (unsweetened): 2 tablespoons
Baking powder: 1 heaped teaspoon
Pinch of salt
For the Chocolate Cream:
Milk: 5 dl
Sugar: 10 dkg
Vanilla sugar: 1 package (or vanilla flavor)
Flour: 2 tablespoons
Cornstarch (or pudding powder): 2 tablespoons
Butter/Margarine: 20 dkg (room temperature)
Dark chocolate: 10 dkg (at least 50%)
For the Chocolate Glaze:
Dark chocolate (cake coating): 10 dkg
Oil or Butter: 1 tablespoon
Preparation
- Prepare the Sponge Cake:
Preparation: Preheat the oven to 180 °C. Line a baking sheet measuring approx. 20×30 cm with baking paper.
Egg foam: Separate the eggs. Beat the whites with a pinch of salt until stiff.
Mixing: Mix the egg yolks with the sugar until foamy, then add the hot water a spoonful at a time until you get a light, foamy mixture.
Dry ingredients: Sift together the flour, cocoa powder and baking powder in a separate bowl.
Assembly: In two or three parts, carefully fold in the dry ingredients with a hand whisk or wooden spoon, then finally the stiff peaks of the egg whites.
Baking: Pour the batter into the pan and bake at 180 °C for approx. 15-20 minutes (pin test!). Leave to cool completely. - Preparing the Chocolate Cream:
Basic cooking: Take 1 dl of milk, mix the flour, starch and vanilla sugar in it until lump-free.
Pudding: Boil the remaining milk with the sugar. Pour in the lump-free mixture and cook, stirring continuously, until it becomes a thick pudding. Remove from the heat.
Chocolate: Break the 10 dkg of dark chocolate into the hot pudding and stir until it melts completely.
Cooling: Cover the cream with cling film (so that the film is in direct contact with the surface of the cream to prevent a skin) and leave to cool completely.
Adding butter: Mix the cooled cream with a whisk, then add the room-temperature butter/margarine and beat until fluffy and light. - Assembly and Glaze:
Creating: Cut the cooled sponge cake in half (or spread the cream all over it if it is tall enough). Spread evenly with the rich chocolate cream.
Glaze: Melt the cake coating and oil/butter over steam or in the microwave on low heat and mix until smooth. Pour over the top of the cake and spread evenly.
Refrigerate: Place the cake in the refrigerator for at least 4-5 hours, but it is best to leave it overnight so that the cream can set and the sponge cake can absorb the creamy flavors.
Slicing: Cut the cake into slices with a knife dipped in hot water and wiped dry.
Tip: For a festive version, you can decorate the slices with grated chocolate, hazelnuts, or fresh fruit (e.g. raspberries or strawberries) when serving.
