Rolls that crunch like the first snow step and melt on the tongue in a walnut-cinnamon mist…
This simple recipe will please anyone who likes homemade sweets that smell of a cozy room, an oven and a Sunday afternoon.
The rolls are crispy thanks to the butter, soft thanks to the cream and full of a distinctive walnut filling. They are ready relatively quickly and are great for holidays, family celebrations and just plain tea.
Ingredients (approx. 32 pieces)
For the dough
130 g softened butter
1 egg
2 tablespoons cream
2 tablespoons powdered sugar
100 ml vegetable oil
a pinch of salt
1.5 g vanilla or vanilla sugar
2 tablespoons starch
8 g baking powder
approx. 3 cups plain flour (200 ml cup)
For the filling
hazelnuts or walnuts
sugar
cinnamon
(ratio according to taste – fine nut crumbs with a cinnamon scent are ideal)
Step-by-step procedure
- Preparing the nut filling
Lightly roast the nuts in a dry pan or briefly in the oven – their aroma will develop.
Then blend or crush them into fine crumbs.
Add the sugar and cinnamon, mix and set aside. - Dough
In a bowl, mix:
softened butter
eggs
pinch of salt
cream
oil
icing sugar
starch
baking powder
vanilla
Finally, gradually add the flour and work into a soft, pliable dough.
Shape into a ball, wrap in cling film and leave to cool for 15 minutes.
- Shaping the rolls
Divide the dough into two equal parts.
Pour some of the nut mixture onto the work surface.
Place one loaf of dough on top, sprinkle the filling on the surface and roll out into a round flatbread with a rolling pin.
This will gently press the nuts in.
Divide the dough:
into 8 pieces for larger rolls
or into 16 pieces for smaller, more delicate pieces
Roll each piece from the wide edge to the tip to create a small fragrant roll.
- Baking
Place the rolls on a baking sheet lined with baking paper.
Bake in a preheated oven at 180 °C for 20–30 minutes, until they turn a light golden color.
Tips for even better results
if you want an extra crispy surface, you can lightly dust the finished rolls with powdered sugar
you can add a little cocoa to the filling for a chocolate version
they will last for several days soft and fragrant, stored in a closed jar
