🥜🍫 Chocolate Peanut Butter Cheesecake (No Bake)
This recipe is made for a 20−22 cm diameter cake pan.

I. Basic Ingredients
200 g Oreo cookies (or chocolate, cocoa cookies)
80 g melted butter
II. Ingredients for the Creamy Filling
400 g cream cheese (e.g. Philadelphia, full fat, room temperature)
200 g peanut butter (creamy, unsweetened or lightly sweetened)

100 g powdered sugar (or to taste)
100 g granulated sugar
1 tsp vanilla extract
250 ml cream (cold, at least 30% fat)
III. Ingredients for the Chocolate Topping
100 g dark chocolate (or milk chocolate)
50 ml cream (or milk)
👩‍🍳 Preparation

  1. The Base
Crushing: Crush the Oreo cookies (or chocolate cookies) into fine crumbs.
Mixing: Mix the cookie crumbs with the melted butter.
Shaping: Press the mixture into the base of a 20-22 cm springform cake tin lined with baking paper (or greased). Refrigerate while you prepare the cream.

  2. Peanut Butter Cream
Mascarpone Mixture: In a large bowl, mix (or whip with a stand mixer) the room temperature cream cheese with the peanut butter, powdered sugar, granulated sugar and vanilla extract until smooth and creamy.
Whipped Cream: In another bowl, whip the cold cream to stiff peaks.
Swirl: Gently fold the whipped cream into the peanut butter cream with a wooden spoon or spatula until smooth.
  3. Assemble

Filling: Spoon the peanut butter cream onto the prepared, cold biscuit base. Smooth the top.
Cooling 1: Refrigerate the cheesecake for at least 4 hours, but ideally overnight, to set.
  4. Chocolate Ganache
Heating: Heat the cream (or milk) in a small saucepan (do not boil!).
Melting: Break in the chocolate and stir until the chocolate is completely melted and a smooth, shiny ganache is formed.
Decorating: Pour the ganache over the frozen cheesecake.
Cooling 2: Refrigerate again until the ganache is set.
You can decorate with peanut butter pieces or whole peanuts before serving! Enjoy!
