Vegetable patties are one of the most rewarding meals: quick, cheap, soft, crispy on the outside and beautifully juicy on the inside. They are perfect for lunch, dinner or a snack. If you want to get more vegetables into your diet, this recipe is perfect.
Below you will find an adapted Czech version of a popular recipe – simple, homemade and delicious.
🥕 What you need (basic ingredients)
50 g grated carrots
150 g (about 1 cup) grated zucchini
50 g finely chopped onion
1 egg
100 ml milk
50 g (1/3 cup) all-purpose flour
A pinch of salt (to taste)
Freshly ground pepper (to taste)
2–3 tablespoons oil for frying
👩🍳 How to make crispy vegetable patties step by step
Prepare the vegetables
Grate the zucchini and carrots roughly. Add the thin onion strips and mix everything together in a large bowl. You don’t need to squeeze the zucchini completely – a little juice will help the patties to be soft.
Prepare the dough
In another bowl, beat the eggs with the milk.
Then gradually add the flour, salt and pepper and mix until you have a smooth, lump-free dough.
Mixing the dough and vegetables
Pour the dough into the vegetables and mix gently. The mixture should be thick but easy to spoon. If it is too runny, add a little flour.
Frying
Heat the oil in a frying pan.
Scoop out a few portions of the mixture, place in the pan and flatten slightly.
Fry for 2-3 minutes on each side until golden brown and nicely crispy.
After frying, let them drain on paper towels.
Serving
Serve hot – best with:
garlic yogurt dip,
tomato salsa
or a fresh green salad.
