What you will need (20×30 cm dough)
300 g plain flour
200 g sugar
3 tablespoons high-quality cocoa
1 packet baking powder (10 g)
1 teaspoon baking soda
250 ml sparkling mineral water
100 ml oil (sunflower or coconut)
1 tablespoon vinegar (reacts with soda and makes the dough puff up nicely)
1 teaspoon vanilla or rum flavoring
A pinch of salt
Optional ingredients
50 g chopped nuts, raisins or seeds
Chocolate chips suitable for a fasting/vegan diet
Icing sugar or a simple chocolate glaze for the end
Preparation process
- Combine dry ingredients
Sieve flour into a large bowl, add sugar, cocoa, baking powder, soda and salt.
Mix everything together to combine the ingredients evenly. - Liquid part
In a second bowl, mix the mineral water, oil, vinegar and flavouring.
The sparkling water will make the dough beautifully airy. - Connection
Pour the liquid mixture into the dry and mix gently with a whisk or spatula.
Don’t mix for too long – just enough to combine the ingredients. The dough should be smooth and slightly liquid. - Optional ingredients
If you like nuts, raisins or chocolate chips, now is the time to add them.
Baking
Line a baking tray with baking paper or grease it with oil and dust with flour.
Pour the dough and smooth it out.
Bake in a preheated oven at 180 °C for approximately 30-35 minutes.
Test with a skewer – if it comes out clean, you’re done.
Finishing and serving
Let the biscuit cool completely so it cuts well.
