Festive Meringue Wreath with Berries and Cream

This is a stunning and extremely elegant dessert for the Christmas table! The meringue wreath (or Pavlova wreath) provides a light, crispy base, which is crowned with cream and fresh berries.

The key to success is the contrast of the perfect, crispy meringue and the fresh, tart filling.

4 pcs Egg Whites Room temperature.
250 g Granulated Sugar (very fine grain)
1 tsp. Food Starch (corn) This is the secret to the crispy outside, soft inside texture.
1 tsp. White wine vinegar or lemon juice Stabilizes the foam.
5 dl Cream (30-35% fat content) Cold, whipped to a stiff peak.

Decoration Berries Pomegranate seeds, raspberries, blueberries, red currants.
Decoration Mini-meringues Meringue balls painted white, red or green (optional).
🔪 Preparation (The Meringue Wreath)
Preparation: Draw a circle of approx. 25-30 cm in diameter (ring inside and outside) on a piece of baking paper. Preheat the oven to a very low temperature (approx. 110 °C).

Whipping the foam: Beat the egg whites with a pinch of salt until soft peaks form.
Adding the sugar: Slowly add the sugar, little by little, and continue beating until the foam is completely stiff, shiny and the sugar grains have completely dissolved.
Stabilization: Gently swirl in the vinegar/lemon juice and cornstarch with a wooden spoon.
Shaping: Fill the mousse into a piping bag (preferably with a star nozzle). Pipe the mousse along the outline into a wreath shape. Leave a hollow in the middle for the cream.

Drying (The Secret): Pop it into the oven. Dry (bake) at a very low temperature for 60-90 minutes. The meringues should be white and crispy on the edges but soft on the inside.
Cooling: Turn off the oven and let the meringues cool inside (so they don’t collapse or crack).
🍒 Filling and Decoration (The “Berries”)
Whipped Cream: Whip the cold cream with a little vanilla sugar until stiff.
Filling: Just before serving (so that the cream doesn’t soak the meringue), spoon or press the whipped cream into the hollow of the wreath.

Decoration: Sprinkle generously with fresh, festive berries (pomegranate seeds, raspberries, currants). You can scatter “meringue berries” (tiny, colorful mini-meringues) between the berries or along the edge of the meringue base for an even more whimsical look!
