Festive Pomegranate Glazed Cheesecake Domes with Silky Peppermint Cheesecake and Graham Cracker Base

This dessert recipe is the epitome of Christmas elegance and flavor! The bright color of the pomegranate glaze, the freshness of the peppermint, and the texture of the silky cheesecake make for the perfect festive dome.

I put together the recipe to be as light (not too heavy with cream cheese) and spectacular as the description says, with servings per serving.

150 g Gluten-Free Graham Crackers Or other gluten-free tea cookies.
50 g Melted butter/margarine For the base.
500 g Cream cheese (e.g. mascarpone and Philadelphia in a half and half ratio) The base of the cream.
1 dl Cream (whipped cream) Whipped until foamy, for silkiness.


100 g Powdered sugar (to taste) To sweeten the cream.
1/2 tsp Peppermint extract For a refreshing taste.
A few drops Green food coloring (optional) For a pale, festive green shade.
2 pcs Gelatin sheets To stabilize the cream (or 1 teaspoon powdered gelatin).
2 dl Pomegranate juice (100%) The base of the glaze.
2-3 tbsp Sugar To sweeten the glaze.
1 package Cake jelly (or 1 teaspoon starch) To thicken the glaze.

🔪 Preparation (Domes)

  1. 🍪 Biscuit Base
    Crush the biscuits in a food processor or crush them in a bag with a rolling pin.
    Mix them with the melted butter and spread evenly on the bottom of the silicone half-sphere molds (or mini cake rings). Press down well.
    Refrigerate while you prepare the cream.
  2. 💚 Silky Peppermint Cream


    Soak the gelatin sheets in cold water or dissolve the powdered gelatin in a little warm water.
    Mix the cream cheese with the powdered sugar, peppermint extract and food coloring until fluffy.
    Beat the cream in a separate bowl until stiff.
    Stir the dissolved, lukewarm gelatin into the cream cheese mixture.
    Finally, carefully fold the whipped cream into the cream with a wooden spoon to maintain its airy, silky texture.
    Pour the cream into the molds on the biscuit base (leaving about 1/2 cm for the glaze) and refrigerate for at least 4 hours (or overnight).
  3. 🔴 Pomegranate Glaze


    Boil the pomegranate juice with the sugar.
    Mix the cake jelly or starch with a little cold pomegranate juice until lump-free.
    Pour it into the hot juice and cook until thickened.
    Remove from the heat and let it cool to lukewarm.
    Remove the frozen cheesecake domes from the molds. Pour the glaze on top of the domes or swirl them in.
    Finally, decorate with fresh pomegranate seeds.
    Serving Tip: Serve the domes on small plates, garnished with a few fresh mint leaves for color contrast!
