If you are looking for a quick, delicious and really tasty breakfast idea, you will love this recipe as much as I do. This is not a classic pancake, nor a traditional cheese pancake – yet it tastes so perfect that we call it a “good mood morning”.

These small, fluffy pieces have a pleasantly milky taste, crispy edges and remain beautifully soft inside. They go great with honey, homemade jam, sour cream or fresh strawberries. They are ideal if you are short on time in the morning – the dough is ready in a few minutes.

And if you like to explore new flavors, try adding a little cinnamon, lemon zest or a drop of vanilla to the dough. Your breakfast will immediately take on a completely new character.

🍽️ Ingredients
For a medium portion you will need:

200 g soft cottage cheese (preferably full-fat)
1 egg
100 g kefir (slightly warmed, not cold)
a pinch of salt
2 tablespoons of sugar
1 packet of vanilla sugar (approx. 10 g)
130 g of fine flour
½ teaspoon of baking soda
oil for frying
👩‍🍳 Step by step
1️⃣ Preparing the base
Put the cottage cheese, eggs, warm kefir, salt, sugar and vanilla sugar in a bowl.

Mix everything to combine the ingredients into a smooth mass.

2️⃣ Add the flour
Sift the flour mixed with the baking soda into the mixture.
Mix until you get a thicker dough – it should be smooth and lump-free.

You can transfer the dough to a bag for easier shaping.

3️⃣ Fry until golden brown.
Heat a little oil in a frying pan.
Form small loaves from it using a bag or spoon.
Fry for a few minutes on each side until they are nicely golden brown.

4️⃣ Let them drain.
Place the finished pieces on a paper towel to drain the excess oil.
