This soup is ideal as an appetizer or light dessert when served warm, smoothed with cream.

📝 Ingredients
Quantity Ingredient Note
1 kg Apples Sour variety (e.g. Granny Smith), peeled and diced.
1 liter Water (or apple juice in a half-and-half ratio)
1 dl White wine (sweet) Optional, but gives a very festive flavor.
1 stick Cinnamon
4-5 pcs Cloves (whole)

1 pc Star anise
1/2 pc Lemon juice and zest
To taste Sugar or honey Depending on the sourness.
2 dl Cream (cooking cream or whipped cream) For silkiness.

Cooking: In a saucepan, bring the diced apples to a boil with the water/apple juice. Add the spices (cinnamon sticks, cloves, star anise) and lemon zest.
Flavoring: Bring to a boil, then cook the apples over low heat until soft (about 10-15 minutes). Add the sugar/honey and wine.
Blend: Remove the cinnamon stick and star anise from the pot (or cook them in a tea egg to avoid the need to fish). Blend the soup with an immersion blender until creamy.
Cream: Pour in the cream and bring back to the boil. Add the lemon juice and taste.
Serve: Serve warm, garnished with a pinch of cinnamon, a few toasted almond slivers or a thin layer of whipped cream.
