Vegetable meatballs (or vegetable patties) are a great vegetarian alternative to meatballs and a perfect way to sneak a lot of vitamins into your meal! With the given ingredients (cheese, carrots, onions) we get a very tasty meatball with a creamy inside and a crispy crust.

2 pcs Large Carrots Coarsely grated.
1 pc Medium Red Onion Very finely chopped (or grated).
150 g Semi-hard cheese E.g. Trappist, Edam. Coarsely grated.
2 pcs Eggs Binding agent.
3-4 tbsp. Breadcrumbs To thicken, to absorb excess moisture.
2 tbsp. Fine flour Helps the meatballs hold together.
To taste Salt, pepper Spices.
To taste Parsley Freshly chopped.
Oil For frying

Prepare vegetables:
Peel and coarsely grate the carrots.
Peel and finely chop the onions.
Coarsely grate the cheese.
Mixing: In a large bowl, mix together the grated carrots, chopped onions and grated cheese.
Eggs and Spices: Add the eggs, salt, pepper and freshly chopped parsley. Mix together.
Thickening: Add the flour and breadcrumbs. Mix until the mixture comes together but is still manageable. (If it is too soft, add a little more breadcrumbs.)
Tip: Let stand for 5-10 minutes so the breadcrumbs can absorb the moisture.
Shaping: With wet hands, shape the mixture into medium-sized, flatter meatballs or patties.
Frying (In a frying pan):
Heat a little oil in a frying pan (over medium heat).
Fry each meatball until golden brown and crispy on both sides (about 3-4 minutes per side).
Place the finished meatballs on a paper towel to absorb excess oil.
Frying (In the oven – Healthier version):
Place the meatballs on a baking sheet lined with parchment paper.
Spray the meatballs with cooking spray or brush them lightly with oil.
Bake at 180 °C for about 20-25 minutes until golden brown.
You can serve it with yogurt sauce (with garlic or dill), fresh salad, or mashed potatoes.
