Did you know that honey never spoils?
Archeologists have found pots of honey in ancient Egyptian tombs—some are thousands of years old—and they are still perfectly edible. The unique chemistry of honey is responsible for its incredible longevity:
- Low Water Content: Honey naturally has very little moisture. This creates a hyperosmotic environment where bacteria and fungi cannot survive.
- Acidity (Low pH): Honey is acidic, with a typical pH level between $3.0$ and $4.5$. This acidic environment is also hostile to most microorganisms.
- Hydrogen Peroxide: Bees have an enzyme (glucose oxidase) that they use to process nectar. This enzyme mixes with the nectar and creates a small, continuously released amount of hydrogen peroxide, which acts as a natural preservative.
As long as the honey is kept sealed and away from external moisture, it remains an eternal food.
