Refresh Your Vision: Your Daily Cucumber Elixir
This recipe is designed for one serving to enjoy daily.
Ingredients:
1/2 medium cucumber: Wash thoroughly, peeled optionally (if the skin is bitter), and cut into chunks. Cucumbers are rich in water, which promotes hydration, and contain antioxidants as well as vitamins A and C.
1 large handful of baby spinach: Contains lutein and zeaxanthin, both carotenoids that accumulate in the macula of the eye and may protect against harmful blue light and age-related eye diseases. Rich in vitamin K and iron.
1/2 apple (optional): With peel, cored, and cut into chunks. For natural sweetness and additional fiber and antioxidants.
Juice of 1/2 lemon or lime: Provides a potent dose of vitamin C, an important antioxidant that supports eye health and improves the absorption of other nutrients.
1-2 cm fresh ginger: Peeled and grated. Has anti-inflammatory properties and can promote blood circulation, including in the eyes.
100-150 ml cold water: Or coconut water for extra electrolytes. Adjust the consistency.
Optional: 1/2 teaspoon chia seeds or flax seeds for additional omega-3 fatty acids and fiber.

Preparation:
Prepare the ingredients: Wash all ingredients thoroughly. Cut the cucumber, apple, and ginger into pieces that your blender can easily handle.
Place everything in the blender: Start with the water (or coconut water) to make it easier for the blades to work. Then add the cucumber pieces, baby spinach, apple (if using), ginger, and lemon/lime juice. Optionally, sprinkle in the chia seeds/flaxseeds.
Blend: Close the blender and blend all ingredients on high until the elixir is completely creamy and smooth. There should be no remaining chunks. If the consistency is too thick, add more water a sip at a time.
Enjoy immediately: Pour the cucumber elixir into a glass and drink it immediately. This ensures you absorb all the fresh nutrients.
